Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 1/3 cup warm water
  • 1/2 cup sauerkraut, drained and chopped
  • 1/2 cup onion, chopped
  • 1/4 cup parsley, chopped
  • 1/4 teaspoon ground black pepper
  • Oil for frying

Directions

  1. In a medium bowl, combine flour, baking powder, and salt. Stir in melted butter and warm water until a soft dough forms.
  2. Turn dough out onto a lightly floured surface and knead for 3-4 minutes, until smooth.
  3. Cover the dough and let rest for 15 minutes.
  4. In a medium bowl, combine sauerkraut, onion, parsley, and pepper. Stir to combine.
  5. Roll the dough out until it is 1/4 inch thick.
  6. Cut the dough into 3-inch circles using a cookie cutter or glass.
  7. Place 1 teaspoon of the sauerkraut mixture in the center of each circle. Fold the circle in half, and press the edges together to seal.
  8. In a large skillet or deep fryer, heat oil to 375 degrees F (190 degrees C).
  9. Fry the krautkrapfen, a few at a time, until golden brown and crisp, about 3-4 minutes. Drain on paper towels.
  10. Serve warm or at room temperature.
