Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 1/3 cup warm water
- 1/2 cup sauerkraut, drained and chopped
- 1/2 cup onion, chopped
- 1/4 cup parsley, chopped
- 1/4 teaspoon ground black pepper
- Oil for frying
Directions
- In a medium bowl, combine flour, baking powder, and salt. Stir in melted butter and warm water until a soft dough forms.
- Turn dough out onto a lightly floured surface and knead for 3-4 minutes, until smooth.
- Cover the dough and let rest for 15 minutes.
- In a medium bowl, combine sauerkraut, onion, parsley, and pepper. Stir to combine.
- Roll the dough out until it is 1/4 inch thick.
- Cut the dough into 3-inch circles using a cookie cutter or glass.
- Place 1 teaspoon of the sauerkraut mixture in the center of each circle. Fold the circle in half, and press the edges together to seal.
- In a large skillet or deep fryer, heat oil to 375 degrees F (190 degrees C).
- Fry the krautkrapfen, a few at a time, until golden brown and crisp, about 3-4 minutes. Drain on paper towels.
- Serve warm or at room temperature.
