Ingredients

  • 4 eggs
  • 4 slices of prosciutto
  • 1 yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. In a medium-sized bowl, whisk the eggs until well beaten.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the sliced onions and cook until caramelized, about 8-10 minutes.
  4. Remove the caramelized onions from the pan and set aside.
  5. In the same skillet, lay the prosciutto slices flat and cook for 1-2 minutes per side until crispy.
  6. Remove the prosciutto from the pan and set aside.
  7. Pour the beaten eggs into the skillet and cook over medium heat.
  8. As the eggs start to set, gently lift the edges with a spatula and tilt the pan to allow the uncooked eggs to flow to the edges.
  9. When the omelette is almost set but still slightly runny on top, sprinkle the caramelized onions and crispy prosciutto evenly over one half of the omelette.

  11. Using the spatula, carefully fold the other half of the omelette over the filling.
