Ingredients

  • 4-5 large potatoes, peeled and diced into small cubes
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped

Directions

  1. Melt the butter in a large pot over medium heat. Add the onions and garlic and sauté until softened, about 5 minutes.
  2. Add the potatoes and chicken broth, bring to a boil, and then reduce the heat to low. Simmer for 10 minutes or until the potatoes are tender.
  3. Add the cream and season with salt and pepper to taste.
  4. Stir in the parsley and chives.
  5. Serve warm with a fresh green salad.
