Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon paprika
1 can (14.5 ounces) diced tomatoes
1 cup vegetable broth
1 pound cod fillets, cut into 1-inch pieces
1 pound shrimp, peeled and deveined
1 cup frozen peas
1/2 cup chopped fresh parsley
Salt and pepper to taste
Directions
Heat the oil in a large pot over medium heat.
Add the onion and garlic and cook until the onion is softened, about 5 minutes.
Add the oregano, thyme, and paprika and cook for 1 minute.
Add the tomatoes, broth, cod, and shrimp. Bring to a simmer and cook until the fish is cooked through, about 10 minutes.
Add the peas and parsley and cook for an additional 5 minutes.
Season with salt and pepper to taste.
Serve hot with crusty bread or over cooked rice.
