Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1 pound cod fillets, cut into 1-inch pieces
  • 1 pound shrimp, peeled and deveined
  • 1 cup frozen peas
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Add the oregano, thyme, and paprika and cook for 1 minute.
  4. Add the tomatoes, broth, cod, and shrimp. Bring to a simmer and cook until the fish is cooked through, about 10 minutes.
  5. Add the peas and parsley and cook for an additional 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread or over cooked rice.
