Ingredients

  • 6 cups peeled, shredded potatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup melted butter
  • 1/4 cup all-purpose flour
  • 2 eggs, lightly beaten

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine the potatoes, salt, pepper, cheddar cheese, parmesan cheese, melted butter, flour, and eggs. Stir together until all ingredients are well blended.
  3. Lightly grease a 9x13 inch baking dish. Pour the potato mixture into the baking dish, spreading evenly.
  4. Bake in preheated oven for 40 minutes, or until potatoes are tender and the top is golden brown.
