Ingredients
3 sweet potatoes
2 tablespoons olive oil
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon paprika

Directions
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
Scrub the sweet potatoes and dry them. Cut them in half lengthwise.
Scoop out the flesh, leaving about 1/4 inch of flesh on the skin. Discard the flesh or save it for another use.
Cut the sweet potato skins into 1/2 inch strips. Place the strips on the prepared baking sheet.
In a small bowl, mix together the olive oil, garlic powder, pepper, paprika, and salt.
Brush the mixture onto the sweet potato skins. Bake for 20 minutes, flipping them halfway through.
Remove from the oven and let cool for 5 minutes. Top with your favorite toppings and enjoy!
