Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese

Directions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic and sauté until the onions are translucent.
  3. Add the potatoes, chicken broth, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and simmer for 15 minutes, or until the potatoes are tender.
  5. Add the cream and cheese and stir until the cheese is melted.
  6. Serve hot.
