Ingredients

  • 1 cup mashed potatoes
  • 2 ½ cups all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 package (2 ¼ teaspoons) active dry yeast
  • 2 tablespoons butter, melted
  • 1 egg, beaten
  • ¾ cup water, warmed

Directions

  1. In a large bowl, combine the mashed potatoes, flour, sugar, salt, and yeast. Mix until combined.
  2. Add the melted butter, egg, and water and mix until a soft dough forms.
  3. Turn the dough onto a lightly floured surface and knead for about 10 minutes, until the dough is smooth and elastic.
  4. Form the dough into a ball and place in a greased bowl, turning to coat all sides. Cover with a damp cloth and let rise in a warm place for about 45 minutes, or until doubled in size.
  5. Punch down the dough and knead briefly. Shape into a loaf and place in a greased 9-inch loaf pan. Cover and let rise in a warm place for about 30 minutes, or until doubled in size.
  6. Preheat the oven to 375 degrees F (190 degrees C).
  7. Bake the bread for 25 to 30 minutes, or until golden brown. Remove from the oven and let cool.
