Ingredients
- 2 tablespoons butter
- 1 cup diced onion
- 1 cup diced celery
- 2 cloves garlic, minced
- 6 cups chicken broth
- 3 large potatoes, peeled and cubed
- 1 cup diced cooked ham
- 1 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 1 cup half-and-half
Directions
- In a large pot over medium heat, melt butter. Add onion, celery and garlic, and cook until vegetables are softened, about 5 minutes.
- Add chicken broth, potatoes, ham, thyme, and black pepper. Bring to a boil, reduce heat to low and simmer for 15 minutes, or until potatoes are tender.
- Stir in half-and-half and heat through. Serve hot.
