Ingredients

  • 3-4 potatoes, peeled and diced
  • 1 cup shredded cheese
  • 1/2 cup cooked bacon, diced
  • 1/2 cup chopped onion
  • 1/2 cup diced bell pepper
  • 6 eggs
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix together potatoes, cheese, bacon, onion, and bell pepper. Spread into the prepared baking dish.
  3. In a medium bowl, mix together eggs, milk, salt, and pepper. Pour over the potato mixture.
  4. Bake in preheated oven for 40 to 50 minutes, or until eggs are set. Let stand 5 minutes before serving.
