Ingredients

  • 4-5 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups beef broth

Directions

  1. Heat the olive oil in a Dutch oven over medium heat.
  2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the salt, pepper, Worcestershire sauce, oregano, and thyme and cook for 1 minute.
  4. Add the beef broth and bring to a boil.
  5. Add the beef roast and reduce the heat to low.
  6. Cover the Dutch oven and simmer for 1-2 hours, or until the roast is tender.
  7. Remove the roast from the pot and let rest for 10 minutes before slicing.
  8. Strain the cooking liquid and serve over the sliced roast.
