Ingredients

  • 4 plantains, peeled and sliced into 1/4 inch thick slices
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 avocado, peeled and pitted
  • 1 tablespoon lime juice

Directions

  1. In a shallow bowl, combine the flour, paprika, garlic powder, cayenne pepper and salt. Mix until combined.
  2. Dip the plantain slices in the flour mixture, coating them evenly on both sides.
  3. Heat the oil in a large skillet over medium heat. Add the coated plantain slices and cook until golden brown and crispy, about 3-4 minutes per side.
  4. Remove the plantains from the skillet and place on a paper towel-lined plate to drain the excess oil.
  5. In a blender or food processor, combine the yogurt, avocado, and lime juice. Blend until smooth.
  6. Serve the fried plantains with the avocado dip.
