Ingredients

  • 2 lbs pork shoulder, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1/4 cup chicken broth
  • 2 cups roasted green chile, peeled and diced

Directions

  1. In a large bowl, combine the diced pork, onion, garlic, cumin, paprika, oregano, salt, and pepper. Mix until all of the ingredients are well combined.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the pork mixture and cook, stirring occasionally, until the pork is cooked through and the onion is softened, about 10 minutes.
  3. Add the chicken broth and bring to a boil. Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  4. Stir in the roasted green chile and cook for an additional 5 minutes.
  5. Serve with rice, beans, and warm tortillas.
