Ingredients
- 1 package of noodles
- 4-5 fresh figs, diced
- 1 tablespoon of olive oil
- 1 tablespoon of fresh ginger, minced
- 2 cloves of garlic, minced
- 1/2 teaspoon of cumin
- 1/2 teaspoon of coriander
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of cayenne pepper
- 1/2 cup of vegetable broth
- Salt and pepper to taste
Directions
- Bring a pot of salted water to a boil. Add noodles and cook for about 8 minutes or until al dente.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add the ginger and garlic and cook for about 1 minute.
- Add the diced figs and all the spices to the skillet and cook for about 2 minutes. Pour in the vegetable broth and bring to a simmer.
- Drain the noodles and add them to the skillet. Stir everything together and let cook for a few minutes until the noodles are fully coated with the sauce.
- Serve the figgy noodles with freshly cracked black pepper and enjoy!
