Ingredients

  • 1 package of noodles
  • 4-5 fresh figs, diced
  • 1 tablespoon of olive oil
  • 1 tablespoon of fresh ginger, minced
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of coriander
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper
  • 1/2 cup of vegetable broth
  • Salt and pepper to taste

Directions

  1. Bring a pot of salted water to a boil. Add noodles and cook for about 8 minutes or until al dente.
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Add the ginger and garlic and cook for about 1 minute.
  3. Add the diced figs and all the spices to the skillet and cook for about 2 minutes. Pour in the vegetable broth and bring to a simmer.
  4. Drain the noodles and add them to the skillet. Stir everything together and let cook for a few minutes until the noodles are fully coated with the sauce.
  5. Serve the figgy noodles with freshly cracked black pepper and enjoy!
