Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 1/2 cup chicken broth
- 3 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons hoisin sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon red pepper flakes
- 1/4 cup green onions, sliced
- 4 cups cooked white rice
Directions
- In a large bowl, toss the chicken cubes with the cornstarch until evenly coated.
- Heat the oil in a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
- In a small bowl, whisk together the chicken broth, soy sauce, rice vinegar, hoisin sauce, brown sugar, garlic, ginger, and red pepper flakes.
- Pour the sauce into the skillet with the chicken. Stir to combine and cook until the sauce is thickened, about 5 minutes.
- Stir in the green onions and cook for 1 minute more.
- Serve the chicken over cooked white rice.
