- 4 pork chops
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 apples, peeled and diced
- 1/2 teaspoon curry powder

- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/2 cup apple cider vinegar
- 1/2 cup chicken broth
- Salt and pepper to taste
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the pork chops and cook until golden brown, about 4 minutes per side.
- Remove the pork chops from the skillet and set aside.
- Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
- Add the apples and cook until softened, about 2 minutes.
- Add the curry powder, ginger, cumin, coriander, turmeric, and cinnamon and stir to combine.
- Add the apple cider vinegar and chicken broth and bring to a simmer.
- Return the pork chops to the skillet and simmer until cooked through, about 5 minutes.
- Taste and adjust seasoning with salt and pepper, if necessary.
- Serve the pork chops with the apple curry sauce.
