Ingredients

  • 4 pork chops
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 apples, peeled and diced
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the pork chops and cook until golden brown, about 4 minutes per side.
  3. Remove the pork chops from the skillet and set aside.
  4. Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
  5. Add the apples and cook until softened, about 2 minutes.
  6. Add the curry powder, ginger, cumin, coriander, turmeric, and cinnamon and stir to combine.
  7. Add the apple cider vinegar and chicken broth and bring to a simmer.
  8. Return the pork chops to the skillet and simmer until cooked through, about 5 minutes.
  9. Taste and adjust seasoning with salt and pepper, if necessary.
  10. Serve the pork chops with the apple curry sauce.
