Ingredients
- 1 package udon noodles
- 2 tablespoons vegetable oil
- 1 head of broccoli, cut into florets
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
Directions
- Bring a large pot of water to a boil. Add the udon noodles and cook for 8-10 minutes, or until tender.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the broccoli, bell pepper, garlic, and ginger and cook for 5 minutes, or until the vegetables are tender.
- Add the soy sauce and rice vinegar and cook for an additional minute.
- Drain the udon noodles and add them to the skillet. Stir everything together and cook for an additional 2 minutes, or until everything is heated through.
- Serve the udon noodles with vegetables hot.
