  • 1 package udon noodles
  • 2 tablespoons vegetable oil
  • 1 head of broccoli, cut into florets
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar


  1. Bring a large pot of water to a boil. Add the udon noodles and cook for 8-10 minutes, or until tender.
  2. Meanwhile, heat the oil in a large skillet over medium heat. Add the broccoli, bell pepper, garlic, and ginger and cook for 5 minutes, or until the vegetables are tender.
  3. Add the soy sauce and rice vinegar and cook for an additional minute.
  4. Drain the udon noodles and add them to the skillet. Stir everything together and cook for an additional 2 minutes, or until everything is heated through.
  5. Serve the udon noodles with vegetables hot.
