Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground pork
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cups diced zucchini
  • 2 cups cooked brown rice
  • 1/4 cup chopped parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground pork, garlic powder, onion powder, oregano, smoked paprika, black pepper, and salt. Cook for about 5 minutes, breaking up the pork into small pieces, until the pork is browned.
  3. Add the onion, bell pepper, and zucchini and cook for another 5 minutes, stirring occasionally.
  4. Add the cooked brown rice and stir to combine. Cook for another 5 minutes, stirring occasionally.
  5. Stir in the chopped parsley and cook for another 2 minutes.
  6. Serve hot.
