Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup diced pineapple
  • 2 tablespoons dark brown sugar

Directions

  1. Preheat oven to 350°F. Grease a 12-cup muffin tin with cooking spray or butter.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the melted butter, sugar, egg, and vanilla extract until blended.
  4. Add the buttermilk and whisk until blended.
  5. Add the dry ingredients and whisk until just combined.
  6. Spoon the batter into the prepared muffin cups, filling each cup about three-quarters full.
  7. Sprinkle the diced pineapple and brown sugar over the tops of the muffins.
  8. Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let cool in the muffin tin for 5 minutes, then carefully turn out onto a wire rack to cool completely.
