Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
In a large bowl, mix together flour, sugar, baking powder and salt. Make a well in the center and pour in oil, egg, milk and vanilla. Mix until just moistened.
Fold in strawberries. Spoon batter into prepared muffin cups.
Bake in preheated oven for 18 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
