Ingredients
1 package of mushrooms, sliced
1 red onion, chopped
2 cloves of garlic, minced
3 tablespoons of olive oil
1 teaspoon of oregano
Salt and pepper, to taste
1 teaspoon of fresh thyme, chopped
2 cups of gluten-free bread crumbs
1 cup of almond milk
1/2 cup of fresh parsley, chopped
1/4 cup of nutritional yeast
Directions
Preheat the oven to 375°F.
In a large skillet, heat the olive oil over medium heat.
Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
Add the mushrooms and cook for an additional 5 minutes, stirring occasionally.
Add the oregano, salt, and pepper and mix together.
In a large bowl, combine the bread crumbs, almond milk, thyme, parsley, and nutritional yeast.
Add the mushroom mixture to the breadcrumb mixture and mix until combined.
Line a baking sheet with parchment paper and spread the mushroom mixture evenly over the sheet.
Bake for 20-25 minutes, or until the bread is golden brown and slightly crisped.
Remove from the oven and let cool for 5 minutes before serving.
