Ingredients

  • 1 package of mushrooms, sliced
  • 1 red onion, chopped
  • 2 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1 teaspoon of oregano
  • Salt and pepper, to taste
  • 1 teaspoon of fresh thyme, chopped
  • 2 cups of gluten-free bread crumbs
  • 1 cup of almond milk
  • 1/2 cup of fresh parsley, chopped
  • 1/4 cup of nutritional yeast

Directions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the onion and garlic and cook for 3-4 minutes, stirring occasionally.
  4. Add the mushrooms and cook for an additional 5 minutes, stirring occasionally.
  5. Add the oregano, salt, and pepper and mix together.
  6. In a large bowl, combine the bread crumbs, almond milk, thyme, parsley, and nutritional yeast.
  7. Add the mushroom mixture to the breadcrumb mixture and mix until combined.
  8. Line a baking sheet with parchment paper and spread the mushroom mixture evenly over the sheet.
  9. Bake for 20-25 minutes, or until the bread is golden brown and slightly crisped.
  10. Remove from the oven and let cool for 5 minutes before serving.
