Ingredients

  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups chicken broth
  • 2 cups cooked chicken, diced
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream
  • 1/2 cup biscuit mix
  • 1/2 cup milk

Directions

  1. Preheat oven to 375°F.
  2. In a medium saucepan, melt butter over medium heat. Stir in flour, salt and pepper; cook and stir until bubbly. Gradually stir in chicken broth and cream; bring to a boil. Cook and stir for 2 minutes. Stir in chicken and vegetables; remove from heat.
  3. In a medium bowl, combine biscuit mix and milk until moistened. Turn dough out onto a lightly floured surface and roll out to fit the top of a 9-inch pie plate.
  4. Spoon chicken mixture into pie plate and sprinkle with cheddar cheese. Place biscuit crust over the top. Bake in preheated oven for 25-30 minutes, or until the crust is golden brown.
