Ingredients
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups chicken broth
- 2 cups cooked chicken, diced
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese
- 1/2 cup cream
- 1/2 cup biscuit mix
- 1/2 cup milk
Directions
- Preheat oven to 375°F.
- In a medium saucepan, melt butter over medium heat. Stir in flour, salt and pepper; cook and stir until bubbly. Gradually stir in chicken broth and cream; bring to a boil. Cook and stir for 2 minutes. Stir in chicken and vegetables; remove from heat.
- In a medium bowl, combine biscuit mix and milk until moistened. Turn dough out onto a lightly floured surface and roll out to fit the top of a 9-inch pie plate.
- Spoon chicken mixture into pie plate and sprinkle with cheddar cheese. Place biscuit crust over the top. Bake in preheated oven for 25-30 minutes, or until the crust is golden brown.
