Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt; set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Gradually blend in the dry ingredients. Stir in the crushed pineapple and pineapple juice.
Drop by teaspoonfuls onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven, or until golden brown.
Remove from cookie sheets to cool on wire racks.
