Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (10 ounce) package frozen peas
  • 1/2 cup water
  • 2 cups cubed paneer
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and cook, stirring occasionally, until the onion is softened, about 3 minutes.
  2. Add bell pepper, cumin, coriander, garam masala, turmeric, chili powder, black pepper, and salt. Cook, stirring occasionally, until the pepper is softened, about 3 minutes.
  3. Stir in the diced tomatoes, peas, and water. Bring to a boil, reduce heat to low, and simmer, stirring occasionally, until the vegetables are tender, about 10 minutes.
  4. Carefully stir in the paneer cubes and cook until heated through, about 5 minutes.
  5. Garnish with cilantro and serve warm.
