Ingredients
2 tablespoons olive oil
1 large onion, finely chopped
4 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1/4 teaspoon red pepper flakes
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon sea salt
2 cups dry white beans, soaked overnight in water
4 cups vegetable broth
1 bay leaf
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup freshly squeezed lime juice
Directions
Set the Instant Pot to the sauté mode and heat the olive oil.
Add the onion and garlic and sauté for 5 minutes or until the vegetables are softened and fragrant.
Add the bell peppers, red pepper flakes, smoked paprika, cumin, coriander, and salt. Sauté for an additional 2-3 minutes.
Add the soaked beans and 4 cups vegetable broth to the Instant Pot. Stir to combine.
Secure the lid and set the valve to sealing. Select the manual/pressure cook setting and set the timer to 20 minutes.
When the timer is done, allow for a natural pressure release for 10 minutes.
Add the bay leaf, parsley, cilantro, and lime juice. Stir to combine.
Carefully open the valve to release any remaining pressure. Remove the lid and stir the stew.
Serve warm with a side salad or crusty bread.

The stew is usually served with a side of potatoes, rice, or crusty bread.
The stew can be made with either pork or beef.
This Instant Pot version is much quicker and easier to make than the traditional version.
