Ingredients
- 1 lb. large shrimp, peeled and deveined
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup prepared pesto
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon freshly ground black pepper
- Salt, to taste
Directions
- In a large skillet over medium-high heat, heat olive oil.
- Add garlic and cook for 30 seconds, stirring constantly.
- Add shrimp and cook for 3 minutes, or until shrimp is cooked through.
- Stir in pesto and lemon juice and cook for 1 minute, stirring constantly.
- Season with salt and pepper to taste.
