Ingredients
2 cups of fresh or frozen blueberries
1/2 cup of freshly squeezed pink grapefruit juice
1/4 cup of honey
2 tablespoons of freshly grated ginger
Directions
In a medium-sized saucepan, combine the blueberries, grapefruit juice, honey, and ginger. Bring to a boil over medium-high heat.
Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
Remove from the heat and allow to cool for 5 minutes.
Transfer the mixture to a blender and blend until smooth.
Pour the mixture into a shallow bowl and place in the freezer for 1 hour, stirring every 15 minutes.
