Ingredients

  • 3 ripe bananas
  • 1/3 cup almond milk
  • 1/4 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free flour
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins (optional)

Directions

  1. Preheat the oven to 350 degrees F and grease a 9x5-inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until mostly smooth.
  3. Stir in the almond milk, coconut oil, sugar, and cinnamon until combined.
  4. Add the baking powder, baking soda, salt, and vanilla and stir until combined.
  5. Add the gluten-free flour and stir until just combined. Don't overmix.
  6. Fold in the walnuts and raisins, if using.
  7. Spread the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
