Ingredients
- 3 ripe bananas
- 1/3 cup almond milk
- 1/4 cup coconut oil, melted
- 1/2 cup coconut sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups gluten-free flour
- 1/2 cup chopped walnuts
- 1/2 cup raisins (optional)
Directions
- Preheat the oven to 350 degrees F and grease a 9x5-inch loaf pan.
- In a large bowl, mash the bananas with a fork until mostly smooth.
- Stir in the almond milk, coconut oil, sugar, and cinnamon until combined.
- Add the baking powder, baking soda, salt, and vanilla and stir until combined.
- Add the gluten-free flour and stir until just combined. Don't overmix.
- Fold in the walnuts and raisins, if using.
- Spread the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
