Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 jalapeno peppers, diced
  • 1 red bell pepper, diced
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 pound ground chicken
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (8 ounce) can tomato sauce

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion, garlic, jalapeno peppers, and bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the cumin, chili powder, oregano, and salt. Cook, stirring, for 1 minute.
  4. Add the ground chicken and cook, breaking it up with a spoon, until cooked through, about 5 minutes.
  5. Add the tomatoes, beans, and tomato sauce. Bring to a simmer and cook for 10 minutes.
