Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup diced pineapple
  • 1/2 cup chopped macadamia nuts

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, stir together sugar, oil, applesauce, egg, and vanilla extract. Add in the dry ingredients and mix until just combined.
  4. Fold in pineapple and macadamia nuts. Pour batter into prepared loaf pan.
  5. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before slicing and serving.
