Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon lemon zest
  • 1/2 cup crushed pineapple, drained
  • 2 cups all-purpose flour

  • 1/2 cup milk

Directions

  1. Preheat the oven to 350°F.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the vanilla extract, lemon juice, and lemon zest.
  5. Stir in the crushed pineapple.

  7. Gradually add the flour mixture to the wet ingredients, alternating with the milk, until fully combined.
