Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup canned crushed pineapple, drained
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup cream of coconut

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Gradually stir in the dry ingredients until blended. Then stir in the crushed pineapple, coconut, and cream of coconut.
  5. Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Let cool in the pan before serving.
