Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup canned crushed pineapple, drained
- 1/2 cup sweetened shredded coconut
- 1/4 cup cream of coconut
Directions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan.
- In a medium bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
- Gradually stir in the dry ingredients until blended. Then stir in the crushed pineapple, coconut, and cream of coconut.
- Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in the pan before serving.
