Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1/2 cup frozen corn
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
  2. Add the garlic, turkey, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook, stirring and breaking up the turkey with a wooden spoon, until the turkey is cooked through, about 8 minutes.
  3. Stir in the diced tomatoes, black beans, kidney beans, and corn. Bring to a boil, reduce the heat to low, and simmer for 20 minutes.
  4. Stir in the cilantro. Serve hot.
