- 1 tablespoon olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1/2 cup frozen corn
- 1/4 cup chopped fresh cilantro
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the garlic, turkey, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook, stirring and breaking up the turkey with a wooden spoon, until the turkey is cooked through, about 8 minutes.
- Stir in the diced tomatoes, black beans, kidney beans, and corn. Bring to a boil, reduce the heat to low, and simmer for 20 minutes.
- Stir in the cilantro. Serve hot.
