Ingredients
- 1 large sweet potato, peeled and diced
- 1 large butternut squash, peeled, seeded and diced
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 2 cloves garlic, minced
- 1/2 cup crumbled goat cheese
Directions
- Preheat oven to 400 degrees F.
- In a large bowl, combine the sweet potato, butternut squash, olive oil, salt, pepper, and garlic.
- Spread the mixture onto a large baking sheet.
- Bake for 25 minutes, stirring once halfway through.
- Remove from oven and sprinkle with goat cheese.
- Bake for an additional 10 minutes, or until the squash and sweet potatoes are tender and golden.
- Serve warm.
