1 large sweet potato, peeled and diced
1 large butternut squash, peeled, seeded and diced
2 tablespoons olive oil
1 teaspoon kosher salt

Directions
Preheat oven to 400 degrees F.
In a large bowl, combine the sweet potato, butternut squash, olive oil, salt, pepper, and garlic.

Bake for 25 minutes, stirring once halfway through.
Remove from oven and sprinkle with goat cheese.
Bake for an additional 10 minutes, or until the squash and sweet potatoes are tender and golden.
