Ingredients
1/2 cup ricotta cheese
1/4 cup icing sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 cup fresh raspberries

Directions
Preheat oven to 350°F (175°C).
In a small bowl, mix together the ricotta cheese, icing sugar, vanilla extract, and ground cinnamon until combined.
Cut the phyllo pastry sheet into 4 equal squares.
Brush each square with melted butter, then place 1 tablespoon of the ricotta mixture in the center of each square.
Top each square with a few raspberries.
Fold the corners of each square in and press gently to seal.
Place the tarts on a baking sheet and bake for 20 minutes until golden brown.
Let cool before serving.
