Ingredients

  • 1 pound beef chuck, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 pound mushrooms, sliced
  • 1/4 cup chopped fresh parsley, to garnish

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes and cook until browned on all sides, about 5 minutes.
  2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Stir in the paprika, cumin, oregano, salt, and pepper. Cook for 1 minute.
  4. Add the beef broth, heavy cream, and sour cream. Bring to a boil, reduce the heat to low, and simmer for 15 minutes.
  5. Add the mushrooms and simmer for an additional 10 minutes.
  6. Garnish with parsley and serve hot.
