Ingredients
1 pound beef chuck, cut into bite-sized cubes
2 tablespoons olive oil
1 onion, diced
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 cup beef broth
1 cup heavy cream
1/2 cup sour cream
1/2 pound mushrooms, sliced
1/4 cup chopped fresh parsley, to garnish
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes and cook until browned on all sides, about 5 minutes.
Add the onion and garlic and cook until the onion is softened, about 5 minutes.
Stir in the paprika, cumin, oregano, salt, and pepper. Cook for 1 minute.
Add the beef broth, heavy cream, and sour cream. Bring to a boil, reduce the heat to low, and simmer for 15 minutes.
Add the mushrooms and simmer for an additional 10 minutes.
Garnish with parsley and serve hot.
