Ingredients
- 1 cup quinoa (rinsed, if necessary)
- 1/2 cup vegetable broth
- 1/2 cup salsa
- 1 avocado, mashed
- 1/2 cup fresh cilantro, minced
- 1/4 cup green onions, sliced
- 1/4 cup jalapeños, diced
- 1 lime, juiced
- Salt and pepper, to taste
Directions
- In a medium saucepan, bring the quinoa and vegetable broth to a boil.
- Reduce the heat to low and simmer, covered, for 12-15 minutes, or until the quinoa is tender and the liquid has been absorbed.
- Transfer the cooked quinoa to a large bowl and stir in the salsa.
- Add the mashed avocado, cilantro, green onions, and jalapeños and stir to combine.
- Add the lime juice and season with salt and pepper to taste.
- Serve warm or at room temperature.
