Ingredients

  • 1 cup quinoa (rinsed, if necessary)
  • 1/2 cup vegetable broth
  • 1/2 cup salsa
  • 1 avocado, mashed
  • 1/2 cup fresh cilantro, minced
  • 1/4 cup green onions, sliced
  • 1/4 cup jalapeños, diced
  • 1 lime, juiced
  • Salt and pepper, to taste

Directions

  1. In a medium saucepan, bring the quinoa and vegetable broth to a boil.
  2. Reduce the heat to low and simmer, covered, for 12-15 minutes, or until the quinoa is tender and the liquid has been absorbed.
  3. Transfer the cooked quinoa to a large bowl and stir in the salsa.
  4. Add the mashed avocado, cilantro, green onions, and jalapeños and stir to combine.
  5. Add the lime juice and season with salt and pepper to taste.
  6. Serve warm or at room temperature.
