Ingredients

  • 2 cups grated carrots
  • 1/4 cup butter
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 eggs, beaten
  • 1/2 cup milk
  • 1/2 cup flour
  • 1 teaspoon baking powder

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a medium bowl, mix together the grated carrots, butter, sugar, cinnamon, and nutmeg.
  3. In a separate bowl, beat together the eggs, milk, flour, and baking powder.
  4. Mix the carrot mixture into the egg mixture until well combined.
  5. Pour the mixture into the prepared baking dish.
  6. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the souffle comes out clean.
