Ingredients

  • 1 cup cooked beets, diced
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 3 tablespoons tahini
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste

Directions

  1. Combine the beets, chickpeas, garlic, tahini, lemon juice, olive oil, and cumin in a food processor. Blend until smooth.
  2. Season with salt and pepper, to taste.
  3. Serve with crackers, chips, or veggies.
