Ingredients

  • 2 (1/4-ounce) envelopes unflavored gelatin
  • 1 cup cold water, divided
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup confectioners' sugar

Directions

  1. Mix gelatin and 1/2 cup cold water in the bowl of an electric mixer fitted with a whisk attachment.
  2. In a medium saucepan, heat sugar, corn syrup, salt, and remaining 1/2 cup water over medium heat, stirring until sugar is dissolved.
  3. Increase heat and bring syrup to a boil. Boil for 1 minute. Remove from heat.
  4. With mixer on low speed, slowly pour syrup into gelatin mixture. Increase speed to high and beat for 10 minutes. Add vanilla and beat until combined.
  5. Grease an 8-inch square baking dish with butter. Pour marshmallow mixture into dish and spread evenly.
  6. Sprinkle confectioners' sugar over marshmallow and let sit for at least 2 hours.
  7. Cut into squares and serve.
