Ingredients
- 2 (1/4-ounce) envelopes unflavored gelatin
- 1 cup cold water, divided
- 2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup confectioners' sugar
Directions
- Mix gelatin and 1/2 cup cold water in the bowl of an electric mixer fitted with a whisk attachment.
- In a medium saucepan, heat sugar, corn syrup, salt, and remaining 1/2 cup water over medium heat, stirring until sugar is dissolved.
- Increase heat and bring syrup to a boil. Boil for 1 minute. Remove from heat.
- With mixer on low speed, slowly pour syrup into gelatin mixture. Increase speed to high and beat for 10 minutes. Add vanilla and beat until combined.
- Grease an 8-inch square baking dish with butter. Pour marshmallow mixture into dish and spread evenly.
- Sprinkle confectioners' sugar over marshmallow and let sit for at least 2 hours.
- Cut into squares and serve.
