Ingredients
1 cup butter, room temperature
1/2 cup powdered sugar
2 cups all-purpose flour
1 teaspoon baking powder

Directions
In a medium bowl, cream together the butter and powdered sugar until light and fluffy.
In a separate bowl, whisk together the flour, baking powder, and salt.

Shape the dough into a ball, wrap in plastic wrap, and place in the refrigerator for 30 minutes.
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Roll out the dough to 1/4-inch thick and cut into 3-inch circles. Place the circles on the prepared baking sheet.
Bake for 10-12 minutes, until the edges are lightly golden. Cool completely.
Spread the dulce de leche on the bottom half of the cookies. Place the remaining cookies on top, pressing lightly to adhere.
