Ingredients

  • 1 cup butter, room temperature
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 can (14 ounces) dulce de leche

Directions

  1. In a medium bowl, cream together the butter and powdered sugar until light and fluffy.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Add the dry ingredients to the butter mixture and mix until a soft dough forms.
  4. Shape the dough into a ball, wrap in plastic wrap, and place in the refrigerator for 30 minutes.
  5. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  6. Roll out the dough to 1/4-inch thick and cut into 3-inch circles. Place the circles on the prepared baking sheet.
  7. Bake for 10-12 minutes, until the edges are lightly golden. Cool completely.
  8. Spread the dulce de leche on the bottom half of the cookies. Place the remaining cookies on top, pressing lightly to adhere.
