Ingredients

  • 2 tablespoons olive oil
  • 4 chicken breasts, cut into 1-inch cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, seeded and diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crumbled Cotija cheese

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
  2. Add the onion, garlic, and bell pepper and cook until the vegetables are tender, about 5 minutes.
  3. Stir in the chili powder, cumin, oregano, salt, and pepper and cook for 1 minute.
  4. Add the cilantro and Cotija cheese and cook until the cheese is melted and the dish is heated through, about 2 minutes.
  5. Serve immediately.
