Ingredients

  • 2 bunches of bok choy, washed and cut into 1-inch pieces
  • 2 tablespoons of sesame oil
  • 1 tablespoon of soy sauce
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Salt and pepper to taste
  • Optional: 2 tablespoons of chopped scallions

Directions

  1. Heat the sesame oil in a large skillet over medium-high heat.
  2. Add the bok choy and stir-fry for 2-3 minutes, until lightly browned.
  3. Add the soy sauce, garlic, ginger, and salt and pepper, and stir-fry for another 2 minutes.
  4. Add the scallions, if using, and stir-fry for one more minute.
  5. Serve hot.
