Ingredients

  • 1 sweet potato, peeled and cut into cubes
  • 1 zucchini, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 1 red onion, cut into cubes
  • 3 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the sweet potato, zucchini, bell pepper, red onion, garlic, olive oil, oregano, basil, salt, and pepper. Toss to combine.
  3. Spread the vegetables onto a baking sheet and roast for 25 minutes, stirring once halfway through.
  4. Serve hot.
