Ingredients

  • 1 cup quinoa
  • 1 cup cooked lentils
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Directions

  1. Cook the quinoa according to package instructions.
  2. In a large bowl, combine the cooked quinoa, lentils, bell pepper, carrot, cucumber, red onion, parsley, and mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve the salad chilled or at room temperature.
