Ingredients
- 1 lb steak, thinly sliced
- 1 large potato, peeled and diced
- 2 poblano chilies, seeded and diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 8-10 soft taco shells
- Toppings of choice (cilantro, guacamole, etc.)
Directions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the steak and cook for 3-4 minutes or until cooked through.
- Add the potatoes and cook for an additional 4-5 minutes or until the potatoes are tender.
- Add the poblano chilies and cook for an additional 2-3 minutes.
- Stir in the cumin, chili powder, garlic powder, smoked paprika, and salt and pepper.
- Cook for an additional 1-2 minutes.
- Fill each taco shell with the steak and potato mixture and top with your favorite toppings.
- Serve immediately.
