Steak and Potato Tacos with Poblano Chilies

Ingredients

  • 1 lb steak, thinly sliced
  • 1 large potato, peeled and diced
  • 2 poblano chilies, seeded and diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 8-10 soft taco shells
  • Toppings of choice (cilantro, guacamole, etc.)

Directions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the steak and cook for 3-4 minutes or until cooked through.
  3. Add the potatoes and cook for an additional 4-5 minutes or until the potatoes are tender.
  4. Add the poblano chilies and cook for an additional 2-3 minutes.
  5. Stir in the cumin, chili powder, garlic powder, smoked paprika, and salt and pepper.
  6. Cook for an additional 1-2 minutes.
  7. Fill each taco shell with the steak and potato mixture and top with your favorite toppings.
  8. Serve immediately.
