Ingredients
- 1 ½ cup graham cracker crumbs
- ¼ cup butter, melted
- 1 cup grated carrots
- 16 ounces cream cheese, softened
- ½ cup granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Mix the graham cracker crumbs and butter together in a bowl until well blended.
- Press mixture into the bottom and up the sides of a 9 inch springform pan.
- Bake in preheated oven for 8 minutes.
- In a large bowl, mix together the grated carrots, cream cheese, sugar, eggs, vanilla extract, and cinnamon until smooth.
- Pour filling into the prepared crust.
- Bake in preheated oven for 40 minutes.
- Allow cheesecake to cool completely before serving.
