Ingredients

  • 1 cup of corn kernels
  • 1/2 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 2 large eggs, lightly beaten
  • 1/4 cup of finely chopped onion
  • 1/4 cup of finely chopped bell pepper
  • 1/4 cup of vegetable oil, for frying
  • 1/3 cup of mayonnaise
  • 1/4 cup of raspberry jam

Directions

  1. In a medium bowl, whisk together the flour, baking powder and salt. Add the corn kernels, eggs, onion and bell pepper. Stir until combined.
  2. Heat the oil in a large skillet over medium-high heat. Drop the batter by heaping tablespoonfuls into the hot oil and cook for 3 to 4 minutes, until golden brown and crispy.
  3. Remove the fritters from the skillet and drain on a paper towel-lined plate. Repeat with the remaining batter.
  4. In a small bowl, whisk together the mayonnaise and raspberry jam. Serve the fritters warm, with the raspberry mayonnaise on the side.
