Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 red bell pepper, diced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/4 cup fresh parsley, chopped

Directions

  1. Heat olive oil in a large skillet over medium-high heat. Add garlic and shrimp, and season with salt and pepper.
  2. Cook, stirring occasionally, until shrimp is cooked through, about 5 minutes.
  3. Remove from heat and set aside.
  4. In a large bowl, combine cannellini beans, bell pepper, vinegar, mustard, and parsley. Add the cooked shrimp and toss to combine.
  5. Serve chilled or at room temperature.
