Ingredients
2 tablespoons olive oil
2 cloves garlic, minced
1 pound shrimp, peeled and deveined
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 (15 ounce) can cannellini beans, drained and rinsed
1 red bell pepper, diced
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/4 cup fresh parsley, chopped
Directions
Heat olive oil in a large skillet over medium-high heat. Add garlic and shrimp, and season with salt and pepper.
Cook, stirring occasionally, until shrimp is cooked through, about 5 minutes.
Remove from heat and set aside.
In a large bowl, combine cannellini beans, bell pepper, vinegar, mustard, and parsley. Add the cooked shrimp and toss to combine.
Serve chilled or at room temperature.
Interesting Facts
This salad is a great source of protein.
The Dijon mustard adds a nice flavor to the salad.
You can also use cooked, peeled and deveined shrimp for a faster preparation time.
