1 cup custard filling (store bought or your favorite recipe)
1/4 cup semi-sweet chocolate chips
2 tablespoons heavy cream
Directions
In a medium bowl, whisk together the flour, baking powder, and salt. Add the melted butter and water and stir until a dough forms.
On a lightly floured surface, roll the dough out into a thin sheet about 1/4-inch thick. Cut the dough into 1-inch strips and twist each strip into a log shape.
In a shallow bowl, combine the sugar and cinnamon. Heat the oil in a deep-fryer or large pot to 350 degrees F. Fry the churro logs in batches until golden brown and crisp, about 2 minutes. Remove from the oil and drain on a paper towel-lined plate.
Roll the churro logs in the cinnamon sugar mixture and set aside. Fill a pastry bag with the custard filling and pipe the filling into the center of the churros.
In a double boiler, melt the chocolate chips and heavy cream, stirring until smooth. Drizzle the chocolate sauce over the filled churros. Serve with fresh whipped cream and a sprinkle of cinnamon sugar.
